i am one rhubarb lovin' mama

remember the rhubarb i wrote about? the rhubarb from the farmer's market that i screwed up jack's nap for? well, i finally got around to dealing with it. i chopped up every last beautiful green and red stalk yesterday and i made a rhurbarb custard cake with about half the 'barb. the cake is gone now. i think i ate at least half of it. is that bad?

i got the recipe from a cookbook i just bought last thursday. it is an entire cookbook devouted to rhubarb! glee! did you know rhubarb is a veggie? eat up, it's healthy!

you know, i have a load of rhubarb in my garden. if only you lived closer. when i come to visit and see jack, i promise i will bring some for you, if you promise to give me the recipe for the cake. :)

the recipe is simple.
1. pre-heat oven to 350.
2. fix a yellow cake mix. put in pan.
3. place 4 cups chopped rhubarb on top.
4. sprinkle with 1 tablespoon vanilla and 1 cup sugar.
5. pour 1 cup whipping cream on top.
6. bake per box cake mix directions.
** this cake isn't the best i've ever had. i am going to ask a lady from church how she makes her rhubarb cake so much more saucy. stay tuned...
